Food at Terrone Birgu: 16/20
“Produce-driven cuisine” and by far the best cooking to be found in Birgu. The menu changes daily according to what’s in the market, and is a delight for those who live here because it gets away from the rabbit/fish stranglehold beloved by tourists. Instead it forks out into game and different meats. Originally from Australia but with Maltese heritage, chef Adrian Hili learnt his craft at Melbourne’s Rockpool and the iconic River Café in London. He founded Terrone in 2014. The tasting menu is good value at €100 for a lot of food, but as substitutions are not allowed, it is all too often a non-starter. Otherwise memorable highlights include starters such as calves liver sauteed with onions, a raw artichoke salad with mint and lemon, and delicious pasta dishes such as ravioli stuffed with sheep’s cheese, sage and grana all at €16. Adrian’s great triumph is his roasted pigeon d’Anjou, enough to bring lovers here for that alone, priced according to the market. There is a duck leg with borlotti beans at €38, and lots of beef dishes, almost too many, this chef loves his steaks, such as prime rib eye on the bone at €140 a kilo. Interesting sides are separate at €6. Some excellent pannacottas grace the desert menu.
Atmosphere at Terrone Birgu: 8/10
This restaurant can be hard to find for newcomers. Head for Fort St Angelo in Birgu, and just before you get there, make a right before the bridge. Walk along the side of St Angelo mansions towards the Aquaduct, and make a sharp left under scaffolding. April to December it is lovely to sit outside on the terrace with a view of the aquaduct, or in the Marquee on chillier nights. Inside is carved into the rocks beneath the fortress. The crowd is dominated by well-healed locals, Maltese and expats, with a sprinkling of well-informed visitors. Noise level is good.
Service at Terrone Birgu: 8/10
The team here are beloved by locals, and have all bought into the food they serve. The cocktails are good, the wine list is somewhat eclectic, and something of a challenge if your pockets are not as deep as you might wish. But there is a good reasonably priced Chablis, a white Rhone, and the odd interesting Italian white for under €60. The French reds go all the way up but there is normally a good one for under €100.
